ICYMI: I teamed up with my friend and local food stylist, Diana, to bring you three affordable, easy to make Trader Joe’s fall recipes, and I’ve paired each dish with a budget-friendly TJ’s wine as well. This is a great way to enjoy an incredible food and wine pairing at home and not break the bank!

Trader Joe’s Wine and Food Pairing: Pumpkin Waffle Bread Pudding
Looking for a pumpkin dessert that isn’t a pumpkin pie? Behold, the Trader Joe’s Pumpkin Waffle Bread Pudding.
This is such an unexpected yet delicious dish that you could even serve at your next brunch if you wanted to! I’ve picked up the frozen Trader Joe’s Pumpkin Waffles in the past for a quick breakfast, but I love how Diana incorporated one of my go-to TJ’s fall items in this incredible recipe.

“This recipe is a fun twist on a classic, and it’s really easy to make. You can also customize this with more of your favorite fall flavors by topping it with other Trader Joe’s seasonal products like pumpkin butter, apple cider fruit spread, or their cinnamon roll spread. This is perfect for brunch, dessert, or…who am I kidding, this delicious any time of the day.”
I had to pair this festive, seasonal dish with a dessert wine. I opted for the NV Porto Morgado Porto Tawny, a delicious Port from Portugal. Port and Pumpkin dessert is the ultimate pairing: you’re going to want a sweeter wine to bring out all of the flavors of this dish. This wine has nice cherry custard notes, and it will pair well with the sweetness of the Pumpkin Waffle Bread Pudding. You can also pair a Tawny Port with your pumpkin pie during Thanksgiving as well!

Fall Trader Joe’s Food and Wine Series: Pumpkin Waffle Bread Pudding
- Total Time: 45 minutes
- Yield: 6-8 1x
Description
A delicious fall dessert.
Ingredients
1 box Trader Joe’s Pumpkin Waffles
1 ½ cups milk
2 tablespoons butter
1 teaspoon vanilla extract
⅓ cup brown sugar
¼ cup canned pumpkin
¼ teaspoon pumpkin pie spice
2 eggs, beaten
Instructions
- Heat oven to 350°F.
- Butter a 4-6 cup baking dish. Cut up 8 waffles into 2 inch pieces and place in the buttered dish.
- In a medium sauce pan over low heat whisk milk, butter, vanilla, sugar, pumpkin, and pumpkin pie spice. Heat just until butter has melted.
- Cool milk mixture for a few minutes, mix in eggs.
- Pour mixture over cut up waffles.
- Bake for approximately 35 minutes or until custard has set up and the top of the waffles begin to brown.
- Let cool for 5 minutes and serve warm.
